After a long day, there’s nothing better than a bowl of warm, hearty soup that tastes homemade—but takes a fraction of the effort. This Chicken Tortilla Soup combines a few pantry staples with our Kick A$$ Chili and Chicken Soup Seasonings for big flavor without all-day prep.

It’s comforting, nourishing, and easy to pull together with canned vegetables, chicken broth, and a rotisserie chicken. Perfect for busy weeknights or when you’re feeling under the weather and just need a little food for the soul.

Ingredients

  • 1 Tbsp olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 jalapeño, deseeded
  • 3 cloves garlic, minced
  • 1 can (15 oz) fire-roasted tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 8 cups low-sodium chicken broth
  • 1 shredded rotisserie chicken
  • 2 Tbsp Tiger Life Gourmet Kick A$$ Chili Seasoning
  • 1 Tbsp Tiger Life Gourmet Chicken Soup Seasoning
  • ½ tsp bay leaf powder
  • Juice of 1 lime
  • 1 bu cilantro
  • 10-12 corn tortillas
  • oil for frying
  • 2 tsp sea salt

Directions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion, peppers, and garlic. Cook 5 minutes until fragrant. Season with 1 Tbsp Kick A$$ Chili seasoning
  2. Build the base: Deglaze pot with chicken broth. Add fire-roasted tomatoes, black beans, corn, and shredded chicken. Add in 1 Tbsp Kick A$$ Chili, 1 Tbsp Chicken Soup seasonings, and bay leaf powder.
  3. Simmer: Bring to a boil, reduce to low, and simmer 15 minutes to let the flavors meld.
  4. Fry Tortilla Strips: Chop corn tortillas into thin strips and fry for about 45 seconds or until crispy. Drain on paper towels and sprinkle with sea salt.
  5. Finish: Add a juice of 1 lime and a handful of chopped cilantro.
  6. Serve: Ladle soup into bowls and top with tortilla strips, avocado, sour cream, and lilme.
