Ingredients
- 1 whole chicken, spatchcocked
- 1 stick salted butter, softened
- zest of 1 lemon
- juice of 1 lemon, divided
- 2 tsp hot sauce
- 1T shallot, finely minced
- 1 garlic clove, minced
- 2T Citrus Grilled Chicken Seasoning, divided
- 1T each chopped parsley and dill
Directions
- Remove backbone from chicken, clean, and pat dry removing all excess moisture.
- Combine butter, hot sauce, 1T Citrus Grilled Chicken Seasoning, shallots, garlic, lemon zest + ½ juice, parsley, and dill.
- Rub butter all over chicken and underneath skin. Season with 1T Citrus Grilled Chicken total on both sides.
- Roast chicken on 425 degrees for 1 hour or until the thickest portion of the breast reaches 165 degrees. Baste every 20 minutes.
- Finish with a squeeze of fresh lemon.
