Ingredients
- 1lb cod fillets
- 2 tbsp olive oil
- 3 tbsp butter
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- Juice of 1 lemon + zest
- 1–2 tbsp Citrus Grilled Chicken seasoning
- Fresh parsley
- Fresh green onion
Directions
- Pat cod dry and season generously with Citrus Grilled Chicken seasoning on both sides. Let it sit for 5–10 minutes.
- Heat olive oil in a skillet over medium-high heat.
- Sear cod for 3–4 minutes per side until lightly golden.
- Remove and set aside.
- In the same pan, lower heat and add butter.
- Add garlic and sauté until fragrant.
- Toss in cherry tomatoes and cook until they soften and start to burst (about 5–7 minutes)
- Add lemon juice + zest, fresh herbs, and a pinch more seasoning.
- Return cod to the pan and spoon sauce over the top.
- Let simmer for 2–3 minutes until the fish is flaky and fully cooked.
