Ingredients

  • 1lb cod fillets
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • Juice of 1 lemon + zest
  • 1–2 tbsp Citrus Grilled Chicken seasoning
  • Fresh parsley
  • Fresh green onion

Directions

  1. Pat cod dry and season generously with Citrus Grilled Chicken seasoning on both sides. Let it sit for 5–10 minutes.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear cod for 3–4 minutes per side until lightly golden.
  4. Remove and set aside.
  5. In the same pan, lower heat and add butter.
  6. Add garlic and sauté until fragrant.
  7. Toss in cherry tomatoes and cook until they soften and start to burst (about 5–7 minutes)
  8. Add lemon juice + zest, fresh herbs, and a pinch more seasoning.
  9. Return cod to the pan and spoon sauce over the top.
  10. Let simmer for 2–3 minutes until the fish is flaky and fully cooked.
