On busy days, I love picking up a rotisserie chicken on the way home from work and turning it into a complete meal with a few fresh ingredients. This recipe is all about making convenience feel gourmet—crispy seared chicken pieces, smoky black beans with a squeeze of lime, fluffy jasmine rice, and a bright cilantro chimichurri that ties it all together.

Ingredients

  • 1 tsp Tiger Life Gourmet Kick A$$ Chili Seasoning
  • 1 store-bought rotisserie chicken, broken down into pieces (breast, thighs, legs, wings)
  • 2 tbsp olive oil
  • 1 can black beans
  • ½ lime (juice)
  • 1 clove garlic
  • ¼ cup dice onion
  • 1 tsp Valentina hot sauce
  • 2 cups cooked jasmine rice
  • ½ cup fresh cilantro
  • 2 cloves garlic
  • ½ cup olive oil
  • ½ lime (juice)
  • 1 tbsp red wine vinegar
  • ½ tsp red pepper flakes
  • ¼ cup green onions (about 2 medium stalks)
  • Salt & black pepper to taste

Directions

  1. Prep the Chicken: Break down the rotisserie chicken into individual pieces. Heat olive oil in a skillet over medium-high heat. Sear the chicken pieces for 2–3 minutes per side until golden brown and crispy.
  2. Cook the Beans: Drizzle olive oil in a small saucepan. Add minced garlic and onions. Saute for 1 minute. Add the black beans with ½ tbsp Kick A$$ Chili Seasoning, lime juice, and hot sauce of choice. Simmer 5 minutes.
  3. Cook the Rice: Prepare jasmine rice according to package directions. Fluff with a fork.
  4. Make the Cilantro Chimichurri: In a small blender, combine cilantro, garlic, olive oil, lime juice, red wine vinegar, green onion, red pepper flakes, salt, and pepper. Blend until well combined.
  5. Assemble the Plate: Serve seared chicken pieces with a scoop of jasmine rice, black beans, and dress fresh avocado and tomato with a squeeze of lime and a sprinkle of Kick A$$ Chili seasoning. Garnish with cilantro chimichurri over the top.
