Shrimp Rolls with Brioche Buns

Shrimp rolls are one of my favorite ways to show off bold flavor with very little effort. Light, fresh, and handheld, they make a perfect weeknight dinner or crowd-pleasing party dish. The magic comes from my Shrimp & Grits Seasoning, which pulls double duty—adding savory, zesty flavor to both the shrimp and the creamy herb salad. Piled into buttery, toasted brioche buns, these shrimp rolls are proof that simple can still feel gourmet.

Ingredients

  • 1 lb shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 tbsp Tiger Life Gourmet Shrimp & Grits Seasoning
  • 3 celery ribs, finely diced
  • 1 small shallot, finely diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • 2 tbsp fresh dill, chopped
  • 1 lemon, juice + zest
  • 1 garlic clove, minced
  • 1 cup olive oil mayo
  • 1 tsp Tiger Life Gourmet Shrimp & Grits Seasoning
  • 8 brioche buns/rolls

Directions

  1. Pat shrimp dry, toss with olive oil and Shrimp & Grits Seasoning. Sear in a hot skillet for 2–3 minutes per side, until pink and cooked through. Cool slightly, then chop into bite-sized pieces.
  2. In a bowl, combine celery, shallot, parsley, chives, dill, lemon juice, garlic, mayo, and Shrimp & Grits Seasoning. Stir until well blended.
  3. Fold the chopped shrimp into the herb salad mix until evenly coated. For best results, chill for 1 hour or overnight.
  4. Toast and butter brioche buns. Fill each with a generous scoop of shrimp salad.
  5. Enjoy right away with chips, fries, or a light green salad.
