Ingredients
- 2-3 lbs sweet potatoes (~2 jumbo sweet potatoes), large diced
- 1T Gingerbread Cookies Seasoning
- 2T olive oil or butter
- 1 tsp Gingerbread Cookies Seasoning
- ΒΌ cup brown sugar
- 1 cup orange juice
- 1 tsp honey
- 1-2 sprigs of thyme
- zest of 1 lemon
Directions
- Peel rinse and dry sweet potatoes. Chop into large dices. Drizzle with 2T olive oil or melted butter. Seasoning with 1T Gingerbread Cookies Seasoning.
- Roast sweet potatoes at 425 degrees for 30 mins, turning halfway through.
- Combine 1c orange juice, 1/4c brown sugar, 2tsp honey, 1 tsp gingerbread cookies seasoning, and 1 thyme sprig in a pot. Bring to a boil and immediately reduce heat to simmer for 6 mins Whisk as needed.
- Remove glaze from heat. Finish with a pinch of sea salt and the zest of 1 lemon. Remove thyme sprig.
- Drizzle glaze over sweet potatoes and cook additional 5-10 mins if needed.
