These Orange Glazed Sweet Potatoes are a cozy, flavor-packed twist on a Southern classic. The secret ingredient? Peel rinse and dry sweet potatoes. Chop into large dices. Drizzle with 2T olive oil or melted butter. Seasoning with 1T Gingerbread Cookies Seasoning.
Roast sweet potatoes at 425 degrees for 30 mins, turning halfway through.
Orange Thyme Glaze
Combine 1c orange juice, 1/4c brown sugar, 2tsp honey, 1 tsp gingerbread cookies seasoning, and 1 thyme sprig in a pot. Bring to a boil and immediately reduce heat to simmer for 6 mins Whisk as needed.
Remove glaze from heat. Finish with a pinch of sea salt and the zest of 1 lemon. Remove thyme sprig.
- Drizzle glaze over sweet potatoes and cook additional 5-10 mins if needed.
