In a pot melt bacon grease over medium heat. Add diced onions and garlic, cooking until softened and fragrant, about 3 minutes.
Add in smoked ham hock and pour in the chicken broth. Bring to a quick boil and add in potatoes and green beans + juice.
Season with 2 tsp Southern Collards Seasoning. Reduce heat to a low cover and simmer for 30 minutes, until potatoes are just fork-tender.
