Ingredients
- 1 Tbsp Kick A$$ Chili Seasoning
- 1 can refried beans (vegetarian, no lard)
- ½ bell pepper, small diced
- ½ medium onion, small diced
- 2 cloves garlic, minced
- ½ cup shredded cheese (optional, or use dairy-free for vegan)
- 10-12 small corn tortillas
- 3 Tbsp neutral oil (for frying)
- Toppings: pico, guac, jalapeno, salsa, sour cream
Directions
- Prep the filling: Heat 1 tablespoon oil in a skillet over medium heat. Add onion bell pepper garlic and cook until fragrant, about 3 minutes.
- Season the beans: Add refried beans to the skillet. Season with Kick A$$ Chili Seasoning and stir well. Cook for 2–3 minutes until heated through and flavorful.
- Assemble tacos: Spread 2–3 tablespoons of the bean mixture onto half of each tortilla, sprinkle with cheese (if using), then fold closed.
- Crisp them up: Heat remaining oil in a skillet. Fry tacos 2–3 minutes per side until golden brown and crispy. Drain on paper towels.
- Serve & enjoy: Top with pico, guac, and your favorite salsa. Serve hot and watch them disappear!
